In 1998, recognizing the potential of an old Ancellotta vineyard, Luigi Mancini decided to create a wine that would showcase the variety’s finest characteristics. Ancellotta is a variety known for its coloring properties, traditionally used only in tiny percentages to enhance the color of wines made from other grapes. The varietal winemaking process yielded fascinating results, characterized by an impenetrable color, a unique and intense bouquet, and a very significant structure. The indelible stains it left on the winery floor soon suggested its future name: Blu.
Originally created as a blend based on a minimum of 50% Ancellotta, the percentage of this surprising variety has steadily increased over the years, reaching 100% consistently since the 2007 harvest.

Harvesting: Hand-picked in 15 kg ventilated crates, cooled using mobile cold storage units
Vinification: Total de-stemming and crushing. Cold pre-fermentation maceration for about 7 days. Fermentation in tanks with delestage and remontage for about 12 days. Malolactic fermentation fully completed.
Aging: 1 month in French barriques (228 L) – 1st passage 50%, 2nd passage 50%.
