SANGIOVESE
SANGIOVESE is the most traditional red wine of the Province of Pesaro.
Fattoria Mancini cultivates it on the coastal hills of the Monte San Bartolo Natural Park, where it develops distinctive characteristics typical of the variety, yet quite different from the warmer tones it takes on further south in the rest of the Marche or in neighboring Romagna. In this area, the cool microclimate and sandstone soil allow the production of a wine in which significant structure is combined with freshness and elegance.

Harvesting: Hand-picked in 15 kg ventilated crates, cooled using mobile cold storage units
Vinification: Total de-stemming and crushing of grapes at 9°C. Fermentation in tanks with delestage and remontage for about 15 days. Tank fermentation at controlled temperature (max 30°C). Malolactic fermentation fully completed.
Aging: 50% aged 12 months in stainless steel, 50% aged 12 months in barriques on the lees – monthly batonage – Allier barriques of 228 L, with a minimum of 3 months in bottle before release
