IMPERO BRUT
After the historic Roncaglia and Impero Blanc de Pinot Noir labels, the IMPERO Brut de Pinot Noir label represents the natural evolution of Fattoria Mancini’s long-standing experience in vinifying Pinot Noir in white.
The sparkling base, obtained from gentle pressing of whole grapes, is fermented and aged in wood for about seven months, then turned into sparkling wine using the Traditional Method in our own cellar.
The characteristic minerality and salinity imparted by the soils of the Falesia di Focara, along with a fully completed malolactic fermentation, create an organoleptic profile of remarkable complexity and personality.

Altitude: 100–150 m a.s.l.
Soil: Calcareous sandstone with high silt content
Grape variety: Pinot Noir 100% (vinified in white)
Harvest period: Mid-August
Harvesting: Hand-picked in 15 kg ventilated crates, cooled using mobile cold storage units
Vinification: Whole grapes pressed at 9°C. Static decantation of the must. Fermentation in barriques at 18°C. Malolactic fermentation completed 100%. Bottle fermentation using the Traditional Method.
Aging: Sparkling base aged 7 months in wood “sur lies” with batonage. In bottle on the lees: 24 months
